At The Butcher’s Block, we create our Biltong using only premium New Zealand grass-fed beef, carefully selected for its tenderness, rich taste, and superior quality. Every batch begins with the finest cuts to ensure an exceptional eating experience in every bite.

Our specialty lies in the traditional South African air-drying process. Seasoned with a unique blend of vinegar, salt, and signature spices, the beef is slowly cured and naturally dried to develop its distinctive flavour and texture. Unlike ordinary jerky, Biltong is never cooked, allowing it to retain its authentic character, deep savoury notes, and satisfying tenderness.

We hand-pick only premium NZ grass-fed silverside or topside cuts, chosen for the ideal lean-to-fat ratio for biltong.

Slice & Season
Each piece is hand-cut to the perfect thickness and generously coated with our authentic spice and coriander blend.

Cure Overnight
The seasoned beef rests overnight in an apple cider vinegar and spice marinade to develop that signature deep flavour.

Slow Air-Dry
Hung and air-dried for 3–5 days at a precisely controlled temperature until perfectly cured and ready to enjoy.
